Carrot Orange Bars

Makes 24 - 36 squares, depending on how you cut them.

Preheat oven to 350°F. Butter and flour a large baking dish or pan.

Ingredients

Bars:
½ cup butter or margarine, softened
¾ cup sugar
1 cup peeled, cooked and mashed or pureed carrots (scant pound)
1 egg
2 cups flour
2 tsp. baking powder
1 tsp. salt
½ tsp. sugar
½ tsp. allspice
¼ tsp. cinnamon
⅓ cup orange juice
1 tsp. grated orange peel
½ flaked coconut
⅓ cup chopped walnuts

Glaze:
3 Tbsp. orange juice
¾ tsp. grated orange peel
2 cups confectioners sugar

Method

For the bars:
Cream the butter and sugar together. Add the carrot and egg and beat with an electric mixer until very well blended. Sift the flour, baking powder, salt, allspice, and cinnamon together and beat them into the carrot mixture. Beat in the orange juice and peel, and stir in the coconut and walnuts. Spread the batter evenly into the prepared pan. Bake at 350° F for about 35 minutes.

For the glaze:
Mix all the ingredients, and spread on the cake when it is almost cool. Sprinkle the top with grated raw carrot, if desired. Cut into squares when completely cool.
