Buffalo Salmon

Preheat the oven to 425°F


5 Tbsp. butter
¼ cup hot sauce (like Texas Pete’s or Frank’s)
½ cup panko
1 Tbsp. oil
2 lb. salmon fillet
salt and pepper


Melt the butter with the hot sauce and some salt. Set aside ¼ cup of the sauce. Toss the panko in a bowl with the oil. Place the salmon, skin side down on an oiled baking sheet and season with salt and pepper. Brush with the remaining hot sauce mixture. Sprinkle the panko evenly over the top. Bake 15 – 20 minutes or to desired doneness. Plate the salmon and drizzle with some of the remaining sauce.
