Braised Okra

1 lb. okra, stem removed and sliced
2 cups chopped tomatoes
1 cup corn
1 yellow onion, diced
1 green bell pepper, diced
1 Tbsp. garlic, minced
1 Tbsp. olive oil
salt and pepper
Tabasco (optional)
1 bay leaf


Heat oil in a large sauté pan over medium heat. Add onion, pepper and garlic and cook until golden brown. Add tomatoes and bay leaf and simmer covered for 10 to 15 minutes until okra is soft. Add corn and cook another 5 to 10 minutes. Adjust seasoning and add Tabasco.
