Basil Oil

1 bunch basil, leaves only
1 liter olive oil


Drop basil in a pot of lightly salted, boiling water. Remove after 10-15 seconds and put into a bowl of ice water. Squeeze water out. Put in a blender with 1 liter of olive oil or grape seed oil. Puree until blended. Put in a container and refrigerate for 24 hours. Strain the mixture through a filter (a coffee filter works best). Keep oil refrigerated.

Use in dressings, marinades, or drizzle on fish and vegetables.
