Asparagus Roll-Ups

These are great for a party as you can put them together early in the day and bake just before serving. Amount easily increased.

Preheat oven to 425ºF

Ingredients

6 spears asparagus
6 slices of soft bread, white or dark
1 Tbsp. butter, softened
1 Tbsp. butter, melted
1 tsp. mustard
6 slices ham, cooked and thinly sliced
or
6 slices Swiss cheese, thinly sliced

Method

Trim asparagus and cook until tender. Drain and set aside.

Remove the crust from the bread. Roll each slice with a rolling pin until flat and thin. Spread each slice lightly on one side with softened butter and a little mustard. Place a slice of ham or Swiss cheese on one half of the slice of bread. Place an asparagus stalk on each slice and roll up as tightly as possible, making sure the edge is sealed by the butter.

Cut each roll in half. Place the rolls, sealed side down, on a cookie sheet. Brush the tops with melted butter. Bake at 425ºF for approximately 15 minutes, or until brown. Serve warm.
