Apple Quince Sauce

2 quince, peeled, cored, thinly sliced
2 apples (Cortland or Honey Crisp), peeled, cored, thinly sliced
1 qt. apple cider
ΒΌ cup honey
4 sprigs & 1 Tbsp. fresh thyme, chopped
salt and pepper


Put quince, cider and thyme sprigs in a medium pot. Over medium heat, bring up to a simmer and cook for 10 minutes. Add apples and honey. Cook until fruit is tender about 25-30 minutes. Discard thyme sprigs. Add chopped thyme and season to taste with salt and pepper.

Serve with turkey, ham or pork.
