Squash Pancakes
Ingredients Procedure

Stir together:
1 cup cooked mashed winter squash
1 tsp. of melted butter
1 tbsp. of milk
1 beaten egg
Mix together and stir into above 1 1/2cup flour
2 tbsp. sugar
3/4 tsp. Salt
21/2 tsp. Baking powder
1 tsp. Nutmeg
11/4 tsp. Cinnamon

Stir in1 tsp. Melted butter 1 tbsp. milk Melt enough shortening and butter (in equal amounts) in frying pan to just cover the bottom of pan. Fry pancakes until brown on both sides. Serve plain with butter as a side dish with dinner or with confectionery sugar or syrup for breakfast or brunch

Makes 6 to 8 patties.
