Carrot Bread
Ingredients Procedure

3 cups flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 beaten eggs
1 cup oil
2 cups sugar
2 cups cooked, mashed carrot
1 cup chopped walnuts

Sift dry ingredients.
Beat eggs.
Add sugar, oil and carrots into eggs
Gradually beat dry ingredients into egg mixture.
Mix well.
Stir in nuts.
Grease two loaf pans or one angel food pan. Bake at 350ºF for 50 to 60 minutes until done.
