Sun-Dried Tomato Turkey Burgers with Balsamic Onions

Balsamic Onions:

2: yellow onions, cut into ¼-inch slices
¼ cup: balsamic vinegar
2 tbsp: olive oil

Turkey Burgers:

1 lb: ground turkey
2 cloves: garlic, finely chopped
1: shallot, finely diced
¼ cup: fresh chives. chopped
¼ cup: parmesan cheese, shredded
¼ cup: sun-dried tomatoes packed in olive oil, finely diced
1 tsp: red pepper flakes
1 tsp: kosher salt
½ tsp: freshly cracked black pepper

To serve

4 slices: mozzarella cheese
1 beefsteak tomato, cut into 4 slices
1 cup: arugula
2-4 tbsp: balsamic glaze
4 brioche buns, split and toasted


Balsamic Onions:

Pre-heat oven to 400ºF
Toss the onions, vinegar, and oil onto a large baking sheet and transfer to oven.
Roast for 25 to 30 minutes, until softened.

Turkey Burgers:

Pre-heat grill or grill pan to medium heat.
1. Put the ground turkey in a large bowl and add the garlic, shallot, chives, parmesan cheese, sun-dried tomatoes, red pepper flakes, salt & pepper. Using your hands mix all the ingredients into the ground turkey, taking care not to over mix. Form the mixture into ½-inch thick patties.

2. Grill the burgers until cooked through, 5-7 minutes per side, melting the mozzarella during the last minute. Place the burgers on the toasted buns, add the sliced tomato, balsamic onions, arugula, and balsamic glaze, and finish with top bun.

Serve immediately.
