Broccoli Quiche

Serves 8


  • 2 eggs
  • 1 egg yolk
  • 3/4 cup milk
  • 3/4 cup light cream
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/8 tsp. pepper
  • 1 tsp. Worcestershire sauce
  • dash nutmeg
  • dash cayenne pepper
  • 1-1/2 cups cooked, chopped broccoli
  • 1 cup lightly packed shredded swiss cheese

You can always add a little cooked bacon, ham or sausage if you don’t like meatless quiche.

Prepare a 9-in. pie shell. Either bake it partially at 375 degrees for about 8 minutes or brush the inside with slightly beaten egg white to prevent a soggy bottom.

Preheat the oven to 350 degrees. Beat the eggs, egg yolk, milk, cream, salt, mustard, pepper, Worcestershire, nutmeg, and cayenne together in a large mixing bowl until well blended. Spread the broccoli and cheese over the bottom of the pie shell. Pour the liquid mixture over the broccoli and cheese. Bake at 350 degrees for approx. 40 minutes or until lightly brown and set.
