
Zucchini
Ingredients
- 2 Tbs. vegetable oil
 - 1 medium onion, sliced
 - 3 small zucchini squash, sliced 1/4 inch thick
 - 1/2 large green pepper cut into strips
 - 1/2 tsp. salt
 - 1/8 tsp. pepper
 - 1/2 tsp. dried basil
 - 1/2 tsp. oregano
 - 2 medium tomatoes, peeled and chopped
 - 1/3 cup grated parmesan cheese
 
Heat oil in skillet; add onion and cook until soft but not brown. Add zucchini, pepper and seasonings. Cook over moderate heat about eight (8) min. until vegetables are crisp-tender. Add tomatoes and half of the parmesan cheese. Cook about eight (8) min, longer until tomatoes are cooked. Sprinkle with remaining cheese when served.
