
Crispy Baked Hake with Fresh Salsa
Serves 4
Ingredients
For the Salsa
- 2 tomatoes, diced
- 1 yellow pepper, diced
- 1 green pepper, diced
- 1 orange pepper, diced
- 1/2 red onion, diced
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1 tsp. pepper
- 1/2 bunch cilantro, chopped
- 1 jalapeno pepper, diced (optional)
Mix all ingredients together in a large bowl and let stand for 1 hours for the flavors to meld.
For the Hake
- 2 lbs. hake, skinned
- 1 cup tortilla chips, crushed
Preheat oven to 350°F.
Line a baking dish with parchment paper, making sure the paper goes up the sides. Place hake on parchment paper, top with salsa, and then top with tortilla chips. Bake for 15 minutes, or until the fish is firm and opaque.
