Arugula Pesto

Serves 8


  • 2 Tbsp. chopped garlic
  • 2 cups romano cheese, grated
  • 3/4 cup roasted pistachios
  • 5 cups baby arugula, packed
  • 1 cup olive oil
  • salt and pepper

Put garlic, pistachios, and cheese in a food processor. Pulse until finely chopped. Add arugula and olive oil and pulse. Season to taste with salt and pepper. Enjoy.
