Winter Luxury Pumpkin Risotto w/ Baby Spinach & Cranberries



3-1/2 lbs. Winter Luxury Pumpkin, steamed and mashed
1/2 onions, chopped
1/2 Tbs. garlic, chopped
1 lb. wild mushrooms
1 arborio rice
1 quart vegetable stock
1/2 stick butter
1 lb. baby spinach
1 cup dried cranberries (Craisins)
1 pint grape tomatoes
1 oz. olive oil
1/2 quart dry white wine
salt and pepper to taste


Sauté onion and garlic in butter and olive oil. Add rice and stir to coat. Add white wine and stock little by little until absorbed (process will take about 20 minutes until the rice is cooked). When rice is cooked, add mashed pumpkin and craisins. Simmer and mix for 2 minutes, then add cream little by little. Finish by adding spinach and tomato together. Stir well until everything is smooth. If needed add cream or stock. Season to taste and serve.
