Watermelon Gazpacho



1 half watermelon (medium)
1 red onion
8 tomatoes
2 cucumbers
2 Tbsp. sherry vinegar
3 qt. white balsamic vinegar
2 Tbsp. pepper
2 Tbsp. salt
2 Tbsp. hot sauce (optional)
1 Tbs. basil, chopped
1 tsp. garlic, chopped
1/2 cup olive oil, first press


Peel and chop cucumbers and onion. Core tomatoes and chop. Peel and dice the watermelon into medium size pieces.

Add all ingredients to blender or food processor, and pulse until mixture reaches desired chunkiness. Add hot sauce to taste. Lastly, add olive oil to the mixture. Serve chilled.
