Warm Grape Tomato Salad with Leek Fondue & Basil Vinaigrette

Ingredients

1.5lb Grape Tomatoes
2 Leek Stocks (sliced)
½ Cup Wilson Farm Basil Vinaigrette
1 Tbsp. Chopped Garlic
Salt & Pepper to Taste
2 Tbsp. Olive Oil

Method

Sauté’ garlic in a pan with olive oil. Add leeks. Sweat the leeks for 1-2 minutes. Add grape tomatoes. Sauté for 2 minutes on very high heat. Put on a plate and sprinkle with basil vinaigrette.

Can be garnished w/sliced prosciutto, diced mozzarella or can be served with baked fish.
