Vegetable & Turnip Soup

1½ lb. lean stew meat, cut in small pieces
6 cups water
2 cups beef broth
1 medium onion, quartered
1 tsp. salt
2 cloves garlic
1 bay leaf
2 cups rutabaga (yellow turnip) peeled, cubed
1 cup carrot, peeled sliced
1 cup celery, sliced
1 onion, sliced
1½ cups tomato, peeled, chopped
2 Tbsp. tomato paste
1 tsp. salt
½ tsp. dried basil
1 cup small macaroni
¼ cup Parmesan cheese, grated


Simmer the stew meat, water, beef broth, quartered onion, 1 tsp. salt, pepper, garlic and bay leaf for two hours. Remove the garlic and bay leaf. Add rutabaga, carrot, celery, sliced onion, tomato, tomato paste, 1 tsp. salt, dried basil. Simmer for 1 hour. Add the macaroni and cook for about 15 minutes. Stir in the grated parmesan cheese before serving.
