Tofu Spinach Pie

Preheat the oven 350ºF. Butter a 10” pie plate.


1 lb. tofu
2 eggs
1 tsp. salt
⅛ tsp. pepper
2 cups cheddar cheese, shredded
1 ½ cups spinach, cooked, chopped


Blanch about 1 ½ pounds spinach in salted water until limp. Drain well and chop. You should have about 1 ½ cups. Beat together until well mixed, tofu and eggs. Stir in salt, pepper, cheese and cooked chopped spinach.

Bake at 350ºF in a buttered 10” pie plate for approximately 35 minutes. This may also be cooked as a quiche in a pie shell or as a two crust pie. If cooked as a pie top crust, allow 10 minutes longer for cooking.
