Sweet Potato Custard

Preheat to 350ºF


2 cups half and half
3 eggs
⅓ cup sugar
1 ½ tsp. vanilla
½ tsp. salt
½ tsp. nutmeg
1 cup sweet potato or yam, puréed


Scald 2 cups of half and half. Beat eggs slightly. Add the following and beat in, sugar, vanilla, salt, and nutmeg. Beat in, sweet potato or yam. Add cream slowly while beating. Bake in 1 ½ casserole. Place casserole in pan holding about 1 inch hot water. Bake at 350ºF for 45 minutes to 1 hour, until knife inserted in side comes out clean. Cool- serve plain or with whipped cream.
