Shell Bean Chili

Ingredients

1 cup onion, coarsely chopped
2 Tbsp. oil or bacon fat
1½ lbs. lean ground beef
3-3½ cups shell beans, shelled
6 cups tomatoes, chopped and peeled
1½ tsp. salt
2-3 tsp. chili powder (or to taste)

Method

Cook covered for approximately 30 minutes over low heat. Remove cover and simmer uncovered for about 30 minute more or until beans are done and sauce has thickened a bit.

Serves 4-6
