Scrambled Tofu

Ingredients

1 lb. tofu
1 medium onion, diced
1 green pepper, diced
½ tsp. tumeric
salt and pepper to taste
2 Tbsp. vegetable oil

Method

Heat skillet or griddle with oil and sauté onion and pepper until tender, 2-3 minutes. Mash tofu with a fork, combine with tumeric, salt, and pepper, and add to sautéed vegetables in skillet. Scramble together well and serve with a garnish of parsley. Or, scramble equal parts of eggs with tofu, omitting tumeric.
