Sauteed Kale with Kielbasa

1½ -2 lbs. kale, untrimmed
1½ Tbsp. oil
2 Tbsp. butter or margarine
1 cup onion, coarsely chopped
½-¾ cup kielbasa, finely diced
1 clove garlic (optional)


Trim all heavy stems from the untrimmed kale. Wash thoroughly and blanch in boiling, salted water until kale is limo (about 5 minutes). Drain well, chop and set aside. You should have 4 to 5 cups chopped kale.

In a large frying pan, heat oil and butter. Add onion, kielbasa, garlic and sauté until onions soften. When onions are soft (not brown), remove garlic and add chopped, cooked kale. Sauté 3 to 4 minutes until flavors are blended. Add salt, if needed and serve.
