Rugosa Squash


Preheat oven to 325ºF


2 to 3lbs. rugosa squash, cut
4 Tbs. butter, half melted
¼ cup brown sugar
¼ tsp. cinnamon
salt & pepper to taste


Lightly coat squash with butter. Place on a sheet pan lined with aluminum foil. Cook until tender – about 50 to 70 minutes.

Remove flesh from skin. Mash and add remaining ingredients – adding salt 7 pepper to taste.

Use in your favorite recipe. May also be used as a replacement for pumpkin in pie.

Can be cooked plain, and frozen for later use.
