Rhubarb Strawberry Dessert

2 cups rhubarb, cut in ¾-inch pieces (¾ -1 pound)
⅓ cup water
1 package strawberry flavored gelatin (3 oz.)
½ cup sugar
3 oz. cream cheese, softened
½ cup cold water
1½ cups fresh strawberries, sliced


Place the cut rhubarb pieces and ⅓ cup water in a saucepan. Simmer until rhubarb is soft. Remove from heat and add the gelatin and sugar. Stir until dissolved.

Gradually mix hot mixture into the cream cheese. When blended, stir in the ½ cup cold water. Chill until partially set. Stir in strawberries. Fill 6 dessert dishes or stemmed glasses. Chill and serve topped with whipped cream.

This may be chilled in a 8x8-inch square pan, cut into squares and use as a salad. Use only ⅓ cup sugar if using as a salad.
