Raw Parsnip Salad

3 cups parsnips, shredded, raw, peeled
¾ cup celery, chopped
½ cup green pepper, diced
½ cup radishes, thinly sliced
3 Tbsp. Italian dressing (any oil and vinegar dressing)
⅓ cup mayonnaise
¼ tsp. salt
⅛ tsp. freshly ground pepper


Mix thoroughly, parsnips, celery, green pepper, radishes, and dressing. Add mayonnaise salt and pepper. Chill.
