Kohlrabi Gratin


Preheat oven to 400°F


2 lbs. whole kohlrabi, peeled and sliced
1 qt. light cream
2 Tbsp. garlic, chopped
4 oz. butter, softened
1 lb. Swiss cheese, grated
1 pinch cayenne pepper
salt & pepper to taste


Bring the cream, cayenne pepper, 2 ounces of the butter, salt and pepper to a boil. Allow mixture to boil until reduced by half. Add kohlrabi slices and boil for 5 more minutes.

Brush a baking dish with remaining 2 ounces of softened butter and chopped garlic. Pour kohlrabi mixture into the dish and bake for 30 minutes. Sprinkle with Swiss cheese and bake for another 10 minutes, or until cheese is brown and bubbly.
