Grilled Caesar Salad

Preheat charcoal or gas grill to approximately 400ºF.


1 head romaine
3 Tbsp. olive oil
¼ cup finely grated Parmesan cheese
croutons, sliced ciabatta or 7 grain bread
salt and pepper to taste
Caesar salad dressing or dressing of your choice


Remove loose outer leaves and cut romaine half lengthwise. Brush or hand rub each half of romaine with olive oil. Place the romaine, cut side down on the grill and quickly sear the romaine. Remove from heat immediately and plate the romaine.

Sprinkle with Parmesan cheese while romaine is still hot. Drizzle with Caesar dressing or dressing of your choice. Finish with croutons. As an alternative serve grilled pieces of sliced ciabatta or 7 grain bread on the side.
