Escarole & Tomato

1 medium onion, sliced
3 Tbsp. oil
1 clove garlic-minced
2 tomatoes, peeled and chopped
1 head escarole, washed, coarsely chopped
salt and pepper to taste
2 Tbsp. Parmesan cheese, grated


Cook the onion in oil until soft. Add the garlic and tomatoes. Cook for 3 to 4 minutes. Add the escarole and cook until it wilts. Stir in salt, pepper and Parmesan cheese.
