Cream of Leek Pie

Preheat Oven to 350ºF


8 inch unbaked pie shell
12 leeks (small to medium sized)
3 Tbsp. butter
3 egg yolks
½ cup heavy cream
⅓ cup milk
⅓ cup Parmesan cheese, grated
1 Tbsp. Parmesan cheese, grated
¼ Tbsp. salt


Cut leeks into ¾ inch pieces (3 to 3 ½ cups cut using the white and 1 to 2 cups inches of the light green) washed thoroughly. Cook leeks in butter (without browning) until soft- 10-15 minutes. Place leeks in pie shell.

Combine remaining ingredients with the exception of 1 Tbsp. of parmesan. Beat together and pour into pie shell. Sprinkle with remaining parmesan cheese. Bake at 350ºF for 30 to 35 minutes. Serve warm.
