Coriander Yogurt Sauce

Ingredients

1 tsp: coriander seeds
1 cup: Greek yogurt, preferably whole milk
2 tsp: fresh ginger, peeled and grated
1/4 cup: fresh cilantro leaves, chopped
Pinch of Kosher salt

Method

In a small dry skillet, over medium heat, toast the coriander seeds until fragrant (about 2 minutes). Transfer them to a mortar and pestle, and crush lightly.

In a small bowl, whisk together the yogurt, crushed coriander, ginger, cilantro, and a pinch of salt.




Pairs great with Spiced Crab and Corn Cakes or with any roasted vegetables!
