Carrot Oatmeal Muffins


Preheat oven to 400°F


⅓ cup butter or margarine, softened
1 egg
¾ cup milk
¾ cup lightly packed dark brown sugar
1 cup carrot, finely grated
1 cup quick-cooking oatmeal
1¼ cups flour
2½ tsp. baking powder
½ tsp. salt
½ tsp. allspice (or cinnamon)
⅔ cup raisins (optional)


Beat the butter, egg, and brown sugar together with an electric mixer until the mixture is smooth. Stir the milk, carrot, and oatmeal into the butter mixture. Sift the flour, baking powder, salt, and allspice together and combine the two mixtures. Stir in the raisins. Bake at 400°F or approximately 20 minutes in the prepared pan.
