Buttermilk Potato Doughnuts

2 eggs, beaten
¾ cup sugar
3 Tbsp. butter, melted
⅔ cup buttermilk
1 cup potatoes, mashed
3½ cups flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. mace
½ tsp. cinnamon
1 tsp. salt


Beat the eggs. Beat in the sugar. Then beat in the butter, buttermilk, and mashed potatoes. Sift together and stir in the flour, baking powder, baking soda, mace, cinnamon, and salt. Mix well. Chill for 1 to 2 hours until easy to handle.

Roll out on floured surface to ¾” thick-cut with doughnut cutter. Cook in deep fat until browned. Sprinkle with powdered or cinnamon sugar.
