2 lbs. Carrots
1 Medium Sweet Onion Sliced Thin
2 Eggs
1/2 Stick of Butter
2 tbsp. Brown Sugar
1 Apple Peeled and Diced
1/2 Cup Raisins
2 tbsp. Maple Syrup
1/4 Cup of Light Cream |
Preheat oven to 350°
Peel carrots and cut into large pieces. Boil or steam for 10-15 minutes until soft. Drain and set aside. Melt butter, add onion, cook 5-10 minutes add brown sugar, apples and raisins. Cook another 5 minutes. Mash the carrots, add onion mixture, eggs and the cream. Mix well and pour into a greased casserole. Drizzle the top with maple syrup. Bake at 350° for 15-20 minutes |
