Seared Swordfish with Balsamic Tomato Basil Relish

Ingredients Procedure

1 lb. fresh swordfish steak
olive oil
salt and pepper
lemon zest

Balsamic Tomato Basil Relish
4 ripe tomatoes, diced
1 Tbs. garlic, chopped
½ red onion, chopped
1 Tbs. olive oil
1 tsp. salt
1 tsp pepper
1 tsp sugar
2 Tbs. red wine vinegar

Preheat oven to 350º

Rub swordfish with, salt, pepper, lemon zest and olive oil. Sear in a fry pan on high heat for 3 minutes on each side. Finish in the oven for 10 minutes at 350º. Serve with Balsamic Tomato Basil Relish on top.

Balsamic Tomato Basil Relish
Mix all ingredients together. Add chopped fresh basil and mix.
