Ratatouille

Ingredients

  • 1/2 cup olive oil plus more for drizzling
  • 1/4 cup onions, thinly sliced
  • 2 cloves garlic
  • 4 green peppers, cut into julienne strips
  • 3 cups zucchini, cut into 1/2" slices
  • 3 cups summer squash, cut into 1/2 inch slices
  • 2 cups tomatoes, peeled, seeded and quartered
  • 1/2 cup mozzarella cheese
  • Salt and pepper to taste

In a heavy casserole or deep skillet, add 1/2 cup olive oil, onions and garlic. Saute until golden brown. Remove the onions and garlic and combine in layers with green peppers, zucchini, summer squash and tomatoes. Add salt and pepper to each layer. Drizzle top layer with olive oil and simmer, covered, over very low heat for 35 - 40 minutes. Uncover, addd 1/2 cup mozzarella, and continue to heat for 10 minutes or until liquid is reduced. Serve hot or cold.
